Pan Fried

  1. 2-4 eggs
  2. seasoned bread crumbs
  3. parmesan cheese
  4. mrs. Dash
  5. garlic powder
  6. butter
  7. Pam no stick spray


  1. Soak fillets in cold water with table spoon of baking soda for 1/2 hour & rinse. Cut fillet into serving size pieces. Butterfly any thick pieces. Beat egg & dip fillets. Dredge fillets in bread crumbs, parmesan cheese & seasonings. Spray pan with no stick spray & add some butter for flavor. Brown fillets on one side & before flipping sprinkle with more parmesan cheese. Fillets will come out nice & crispy! My favorite with walleye, calico, rock bass & white bass. If you don't mind the calories add more butter. Or substitute crushed potato chips for the bread crumbs & forget the parmesan.
