Ingredients:
3 tbsp. salt
2 tsp. baking soda
1 gallon cold water
Instructions:
Combine all of the ingredients. Mix well.
Submerge fish in solution, weigh down with heavy plate and refrigerate overnight or at least for 6 hours.
Discard water with all oils floating on top. Rinse fish well with cold water.
Dry fish with paper towels and prepare for table with your favorite recipe or freeze.
